Doughnuts??

Anyone have a tried and true recipe for doughnuts at home? Whether they be yeast raised or cake like, they just need to be baked instead of fried please.

Goat Cheese & Olive-Stuffed Chicken Breasts

Hi folks! I made this last night and it was incredibly delicious and simple, I wanted to share. I found it on a Disney website when googling for goat cheese stuffed chicken breasts (if anyone has a copycat recipe for the Milestones version, let me know!)

Goat Cheese & Olive-Stuffed Chicken Breasts

The hard part of making this elegant dish is choosing the filling. Making a pocket in the chicken breast to hold the stuffing is easy, particularly if you use a good, sharp, thin-bladed knife. Browning the chicken in a skillet before baking gives it a beautiful golden color. Finishing it in the oven ensures that it cooks evenly throughout.

Prep Time: 25 minutes
Ready in: 50 minutes
Yield: 4 servings
Ease of Prep: Easy


Recipe Ingredients
  • 2 tablespoons creamy goat cheese (I may have used a little more...)
  • 1 tablespoon chopped black olives (I had to pit a bunch of Kalamatas, which were all I had.)
  • Freshly ground pepper to taste
  • 4 boneless, skinless chicken breast halves (1-1 1/4 pounds total)
  • 1 large egg white
  • 1/2 cup plain dry breadcrumbs
  • 2 teaspoons extra-virgin olive oil


Recipe Directions
  • Preheat oven to 400°F. Coat a rimmed baking sheet with cooking spray.
  • Combine goat cheese, olives and pepper in a small bowl with a fork.
  • Cut a horizontal slit along the thin, long edge of a chicken breast half, nearly through to the opposite side. Open up each breast and place one-fourth of the filling in the center. Close the breast over the filling, pressing the edges firmly together to seal. Repeat with the remaining chicken breasts and filling.
  • Lightly beat egg white with a fork in a medium bowl. Place breadcrumbs in a shallow glass dish. Hold each chicken breast half together and dip in the egg white, then dredge in the breadcrumbs. (Discard leftovers.)
  • Heat oil in a large nonstick skillet over medium-high heat. Add chicken breasts; cook until browned on one side, about 2 minutes. Place the chicken, browned-side up, on the prepared baking sheet.
  • Bake until the chicken is no longer pink in the center or until an instant-read thermometer registers 170°F, about 20 minutes.


In terms of changes to the recipe, I browned it on both sides because I didn't read very closely, and cooked it in an open glass Pyrex dish. I also sprinkled some rosemary into the bread crumbs.

Strangest cookie recipe ever

My friend just emailed me this recipe. I haven't tried it yet. She claims they're delicious.

Chocolate Chip Chick Pea Cookies


-Nonstick cooking spray
-1 cup firmly packed brown sugar
-3/4 cup margarine
-2 large egg whites
-2 teaspoons vanilla extract
-1 (15 ounce) can of chickpeas, drained and rinsed
-2 cups semisweet chocolate chips
-3/4 cup raisins (optional)
-3/4 cup chopped walnuts (optional)
-2 cups all-purpose flour
-1/2 cup old fashioned oats
-1 teaspoon baking soda
-1/4 teaspoon salt

Preheat oven to 350 F. Coat baking sheet with cooking spray.

In a large mixing bowl, beat sugar and margarine until smooth. Beat in the egg whites and vanilla, then the chickpeas and chocolate chips. Add the flour, oats, baking soda, salt and mix into a thick dough.

Drop onto cookie sheet by tablespoon. Bake 10-13 minutes (check).

Baked Mac n Cheese

So why bake the mac n cheese? I can just make it like normal (roux, cream, cheese etc) and then not bake it right...? I don't see why not, I'm just asking in case I'm missing something. :P

P.S. If you need say, 2 cups of shredded cheese, does it matter if you use the tiny sized shred or the big sized shred on the shredder? Is 2 cups 2 cups? Or is that why Alton always says to weigh stuff?

Choux Pastry

I'd like to make choux pastry and have a recipe I know works; however, I only have self-raising flour, not the plain flour it calls for. Can I make choux pastry for profiteroles using self-raising flour and still have them turn out fine? I don't mind if it makes them a little puffier than normal, but I'll buy plain flour if they won't cook properly otherwise.

July 23rd, 2008: I forgot to mention that yesterday, July 22nd, was Pi Approximation Day! Today is Approximately Pi Approximation Day, however, so today you can just sort of rub pie around your face with a much greater margin of error. Math holidays, cats and kittens!

"your jam is to jam what stew is to soup."

so this year i've been a canning fanatic. i look around my kitchen and whatever is handy, i throw into a pot and make jam. it's led to some interesting batches.

- blackberries infused in brandy jam
- strawberries infused in blackberry brandy jam
- all star jam (made during the 15 inning all star baseball game, hadn't happened since 1965) consisting of a jam base of apricots, more solid peach bits, and a wee bit of blackberry and strawberry infused brandy.
- plum and strawberry jam. (plums from the back yard)
- cheri amour jam: plum & bing cherry jam.

as you can see this is an insane amount of jam to make in the last few weeks. especially when you've never made jam as an adult on your own. i made jam all the time as a kid. in fact all summer there would always be something being canned.

the art of canning has been making me very happy.

so please share your favorite canning recipe with me! or jam ... anything goes. tyvm

Jamie McGonnigal and Joe's Pub present Broadway Loves the 80's Vol. 3, a concert featuring your favorite Broadway stars singing their favorite hits of the awesomest decade ever!

Directed by McGonnigal and Xanadu’s Marty Thomas, with Music Direction by Ben Cohn, "Broadway Loves the 80's Vol. 3" will take place on Sunday, August 10 at 9:30PM at Joe's Pub, 425 Lafayette Street, NY. The totally rad host of the past two concerts, Mo Rocca (Spelling Bee, VH1’s I Love the 80s) will return for this 3rd incarnation.

Added to the roster for the nearly sold-out event are Nick Adams (A Chorus Line), Adinah Alexander (Wicked), Chris Dilley (Kinsey Six), Mandy Gonzalez (In The Heights), Kyle Dean Massey (Xanadu), Jen Foote (Dirty Rotten Scoundrels), Kennita Miller (Xanadu), Becki Newton (Ugly Betty), Alysha Umphress, Casey Clark and Natalie Weiss, who will be joining previously announced cast members Jenn Colella (High Fidelity), Nikki Renee Daniels (Les Miserables), Eden Espinosa (Rent, Wicked), Anthony Rapp (Rent), Kate Shindle (Legally Blonde), and Ugly Betty’s Michael Urie

The Broadway Loves the 80s band will feature Ben Cohn on keys, Dan Weiner on drums, Michael Blanco on bass and Mike Aarons on guitar.

A portion of the proceeds will benefit The Flood 2008 Fund of The Greater Cedar Rapids Community Foundation for flood relief and recovery donations. One-hundred percent of financial donations to the fund will support Linn County in its recovery from the June 2008 flood. The first priority of the fund is to allocate grants to nonprofit organizations to provide families and individuals basic assistance to reestablish stable living after the June 2008 flood.

The first two editions of the event quickly sold-out and the crowd was on their feet, rockin' out to the totally awesome sounds of the wicked best decade ever! In addition to the totally rad tunes, the event will also feature several raffles and give-aways, so don't miss out!

As the concert is almost sold-out, a very limited number of VIP seats have been made available for $150. This includes a great seat in addition to a poster autographed by the complete cast! These seats are only available by emailing horizonsongs@aol.com

Please Help Homemade Hummus

 

 



I had never had the urge to try hummus until I started searching for something that I could eat as a snack when I found out I was Diabetic. It's the only thing the doctor didn't turn his nose up when I suggested it. (on salt free crackers of course). While it is available in a quality product actually made about 45 miles from me in the market I want to branch out and try making my own, so anyone who has a recipe they would like to recommend I would appreciate it.

OMG the Korean pancake things from the deli downstairs are pretty much the best thing ever. Probably not too easy on my stomach which is *still* throwing a fit, but too tasty to resist.
